The perfect snack to fuel your workout or workday, these energy balls are made with Invigor8 Vanilla Superfood Shake and loaded with healthy fats, protein and nutrients to keep you energized.
½ cup cashew butter*
⅓ cup coconut flour
1 scoop French Vanilla INVIGOR8 Superfood Shake
1 tbsp coconut oil
2 tsp ground cinnamon
¼ tsp vanilla extract
¼ tsp salt
Coconut sugar + cinnamon for coating (optional)
1. Add all ingredients to a food processor or high-speed blender and process until a smooth dough forms, scraping down the sides as needed.
2. Roll the ‘dough’ into tablespoon-sized balls. Place in the fridge to chill for at least 1 hour. If desired, roll the balls in a mixture of coconut sugar and cinnamon.
* In lieu of store-bought cashew butter, add 1 cup of raw cashews to a food processor and blend for 5-10 minutes until a nut butter forms. Alternatively, use any other nut or seed butter, but this will change the flavor.
